Alishan High Mountain Oolong
Also known as Alishan Oolong, Alishan Gaoshan, Gao Shan Cha
One of Taiwan's high-mountain oolongs (gaoshan cha), grown in tea gardens above 1,000 metres. Most are made from the Qingxin Oolong tea plant, some from Jin Xuan or Four Seasons. High-mountain oolongs are known for their sweetness and floral aroma, with little bitterness.
Taste
Sweet, fresh and floral, with little bitterness
How we brew it
90 °C, 5 g per 100 ml. Several infusions, starting at 30 seconds.
Our personal recommendation – adjust it to your taste.
Cultural background
Up in Alishan, days are warm and nights cool, and clouds and mist drift through the tea gardens. The plants grow slowly and are usually picked by hand, so yields are small.
